Salisbury Steak

Ingredients

  • 1 lb ground beef

  • 1 Green pepper, finely diced

  • 1/4 C Breadcrumbs or pulsed GF oats

  • 1 large egg

  • 2 tsp organic Ketchup

  • 1 tsp mustard

  • 1/2 tsp dried parsley

  • 1/2 tsp onion powder

  • 1/4 tsp fine sea salt

  • 1 tsp avocado or coconut oil for the pan

FOR THE GRAVY

  • 2Tbs butter

  • 2Tbs organic flour or non gmo cornstarch or arrowroot powder for GF version

  • 1 1/2C beef stock (or 2 TBS organic Better Than Bullion or beef base)

  • 1 tsp organic ketchup

  • 1 tsp worcestershire sauce

  • 1/2 tsp onion powder

  • 1/2 lb brown button mushrooms, sliced

Preparation

Step 1


put all of your patty ingredients into a bowl and mix well. I use my mixer and dough hook if I double or triple the batch.



Step 2


Shape patties into 4-6 firm circular patties. I like to dish mine slightly to help them keep shape as they cook.

*** at this point you can freeze them between waxed paper or parchment. Thaw before continuing with the recipe****


Step 3


Oil skillet. Brown patties on both sides, 3-5 mins per side, remove to plate or oven if large batching.



Step 4


  1. Make roux in same skillet, don't wipe it out first!!! Melt butter over medium heat, stir in flour and cook until slightly brown, do not overcook. (If using corn starch or arrowroot to thicken, make a slurry and add to pan). Pour in stock, stirring well.

  2. Season with ketchup, worcestershire , onion powder, and stir in mushrooms. Bring to a boil, simmer 5 mins. Add steaks back in, cover and cook 10-15 mins or until cooked through.

  3. Serve over mashed potatoes, noodles, rice or roasted veggies for lower starch option.
