Roasting a whole head of garlic is the key to caramelized delicious depth and flavour..

Ingredients

  1. 1 HEAD OF GARLIC, PEELED AND TRIMMED

  2. 2 TBS OLIVE OIL

  3. 15 OUNCES OF WHITE BEANS: NAVY, CANNELLINI, GREAT NORTHERN ETC. DRAINED AND RINSED

  4. 2 TBS LEMON JUICE

  5. 2 TBS ROSEMARY OR THYME

  6. SALT & PEPPER TO TASTE

  7. ¼ TSP CAYENNE PEPPER *OPTIONAL

  8. ¼ C HOT WATER AS NEEDED TO FLUFF

Preparation

  1. Preheat oven to 400 degrees F. Prepare a whole head of garlic by peeling back the outer skin, slicing off the top, and drizzling with olive oil. Wrap it in foil and roast for 40-50 mins, until soft and caramelized.

  2. Cool

  3. Squeeze roasted garlic into food processor or high powered blender. Add drained and rinsed canned beans, olive oil, freshly squeezed lemon juice, rosemary leaves, black pepper, cayenne, if using, hot water and salt. puree until smooth, adjusting seasoning to taste.
