Mango Masala Quinoa Summer Salad

About the Recipe

An amazing salad that will leave everyone asking for the recipe! It brings in the fruity flavours of summer with the spice of masala that compliment each other like a dream. This salad gets better the longer you let it meld. If you can get ahold of tri-colour quinoa, go for it! Just don't forget to rinse your quinoa really well in a fine sieve before cooking it to reduce the saponins that cause the bitterness. To cook quinoa, add 1 C rinsed quinoa in a pot with 500ml water, cover, and bring to a boil. simmer for 10 minutes, adding a bit of hot water if it looks dry, turn off heat and let sit for 10 minutes. fluff. cool. Proceed with recipe.

Ingredients

  • 1 Mango, diced

  • 1 Red Pepper

  • Shredded Cabbage - 1/2 a head. I use green and purple mixed

  • 2C cooked and cooled quinoa

  • 1/2 C Sunflower seeds, toasted

  • 1C Carrots, shredded

  • 4 TBS Masala spice

  • 2 TBS Maple syrup/honey/agave

  • Juice of 1 lime

  • 1/2 C avocado oil

  • Salt & Pepper to taste


Preparation

Step 1


Prepare all ingredients. Add first 6 ingredients to the bowl. Add the remaining ingredients to a smaller bowl and mix.



Step 2


Pour over the other ingredients


Step 3


Toss gently

Optional* add rice noodles, chow mien or dry ramen (no seasoning!) for more crunch
