Barley Corn Salad

About the Recipe

A great way to get in your complex carbohydrates with whole grain. A really nice blend of textures and flavours that pop.

Ingredients

  • 2 C cooked medium pearl barley

  • 2 C frozen organic or non GMO corn, thawed

  • 1/2C sweet red pepper

  • 1/2C chopped yellow pepper

  • 3 green onions, chopped

  • 1 Tablespoon minced fresh parsley

  • 2 TBS Apple Cider vinegar

  • 4TBS Olive oil, 2 TBS Avocado or light salad oil of choice

  • 1/2 teaspoon salt

  • 1/2 tsp dried thyme

  • 1/8 tsp pepper

Preparation

Step 1


In a large bowl, combine the first 6 ingredients.

Step 2


In a jar with a tight-fitting lid, combine the lemon juice, oil, salt, thyme and pepper, shake well.


Step 3


Drizzle over salad and toss to coat.


Step 4


Cover and refrigerate at least 2 hours before serving
